Inspired by the Russian beef stroganoff, this soup is one of my favourite stews that I would always eat with noodles. Thick and chunky in texture, this soup of blended mushrooms with herbs and is a mushroom lover’s dream come true. This chunky vegetarian version would sure please any vegetarian and non vegetarian alike!
