Hairy crabs grew up in three types of environments, namely, 池，塘， and 湖.
The environment differentiates the grade of the hairy quality they are bred in, being 池 as the lowest grade,塘 as the mid-grade, and 湖 as the highest.
The 太湖蟹 (origin: Lake Tai in Yangtze Lake) distributed by Seaco is akin to Chinese restaurant-grade as they are bred in the best environment, producing roes that are sweet rather than bitter as compared to the other two settings.
